Every year at the beginning of November, the olives at Fattoria Nittardi are harvested using the traditional “brucatura” method (by hand) and immediately taken to the oil mill in San Casciano. The early harvest, careful quality controls and gentle pressing give the oil a very low fatty acid content, this year only 0.21%. Oliva di Nittardi is a fine fruity cuvée from the Moraiolo, Correggiolo and Frantoio varieties, which has an elegant aroma of yellow apples, avocado and kiwi and pleasant notes of basil, pine nuts, almonds and walnuts on the palate. The finish has a peppery spiciness. Oliva di Nittardi is ideal for refining carpaccios, grilled vegetables, fish and meat.
For the first time this year, we have bottled it in 0.5 litre format.
